Parsley and Time
Woke with a craving for a parsley omelette this morning. Having decided it would make a great blog as well as a great breakfast I started making some notes. Mum's parsley sauce was the first thing that came to mind. Thinking back to my childhood, I've lots of parsley related memories. It used to grow by the garden path and I'd pick some as I passed. We must have used loads, as we had a special parsley chopping bowl. Then of course there was Parsley the Lion, king of the Herb Garden.
So back to the present. Parsley is something I often recommend to my clients. It's packed with nutrients, especially magnesium, vitamin C, betacarotene and iron. The Chinese have a thing for parsley too. Chinese medicine suggests parsley for a whole host of ailments including obesity, digestive problems, ear-ache, mucous conditions and strengthening the adrenal glands and optic nerve.
Parsley is also said to discourage food poisoning from fish which may be the historical reason for having parsley sauce with fish.
On top of all that it tastes good. I like to keep a bag in the freezer at all times. I add it to soups and salads, mashed potato and home made garlic bread. Oh yes and omelettes!
